Keto-Friendly Broccoli Side Dish

This is broccoli, but even more delicious than normal!

We love this recipe, adapted from the wonderful Recipe Tin Eats. It’s the perfect side dish for fish, meat or equivalent and could even just be eaten by itself as a starter.

Keto-Friendly Broccoli Side Dish

Ingredients

  • 2 heads broccoli 1kg
  • 2 cloves garlic minced
  • 2.5 tbsp olive oil extra virgin
  • 0.5 tsp salt
  • black pepper
  • 1/2 lemon zest
  • 1 tbsp lemon juice
  • 2 tbsp parmesan cheese freshly grated

Instructions

  • Preheat the oven to 180 degrees celsius (convection) or 220 degrees for a standard oven.
  • Break broccoli into florets and halve any large ones. Similar sizes will help them roast evenly.
  • Pop broccoli on baking tray, drizzle with oil, sprinkle with minced garlic, salt and pepper, and toss to cover.
  • Ensuring the broccoli is all spread out, roast in the oven for 20-25 minutes. The ends should just be browning and the broccoli should be tender but crisp.
  • Remove from the oven and serve warm tossed with the lemon juice, lemon zest and parmesan shavings.
