Slow Cooker Brisket

Autumn is truly upon us, and there is nothing better than eating a bowl of something warm and comforting in the evening.

Get this brisket in the slow cooker first thing in the morning so that by the evening your dinner is an absolute breeze. Perfect for busy family weekends

Ingredients

  • 1 teaspoon olive oil
  • 1.25-1.5 kg joint of brisket
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • 2 cups chicken stock
  • 1 cup water

Instructions

  • Lightly coat the inside of a slow cooker with olive oil. Place the brisket in the bottom.
  • Sprinkle the meat with the onion, garlic, basil, salt, and pepper.
  • Pour the chicken stock and water on top.
  • Cover the slow cooker and cook until tender for 6–8 hours on low/
  • medium heat, basting occasionally.
  • Serve with large selection of sauteed greens and roasted peppers.
